Banff has more options for short hikes that get you to scenic views. Jasper is much less developed and the hiking trails in the wilderness are not as busy, which can be seen as a positive or negative.
Three days will give you enough time to see the main tourist sights in Jasper National Park, but you could spend three weeks hiking and not run out of options.
